Yield: 20–24 crostini
Prep: 15 minutes
Bake: 8–10 minutes
Total: ~25 minutes
Ingredients
For the Crostini
- 1 baguette, sliced into ½-inch rounds
- 2 tablespoons olive oil
- 8 oz goat cheese, softened
- 2 tablespoons heavy cream or whole milk
- Zest of ½ lemon
- ½ cup Ordinary Evelyn’s Rhuberry Jam
- 1 cup fresh raspberries
Optional Garnish
- Additional lemon zest
Instructions
1) Toast the crostini
Preheat the oven to 400°F.
Arrange the baguette slices in a single layer on a large baking sheet. Lightly brush the tops with olive oil.
Bake for 7–9 minutes, flipping halfway through, until lightly golden and crisp around the edges.
Remove from the oven and allow to cool slightly.
2) Make the whipped goat cheese
Add the softened goat cheese, heavy cream, and lemon zest to a medium bowl.
Using a hand mixer or sturdy whisk, beat until smooth, creamy, and easily spreadable. If needed, add another teaspoon of cream to loosen the mixture.
3) Assemble
Spread approximately 1 tablespoon whipped goat cheese onto each toasted baguette slice.
Top with approximately 1 teaspoon Ordinary Evelyn’s Rhuberry Jam.
Finish each crostini with a fresh raspberry.
4) Garnish + serve
Add a little extra lemon zest, if desired.
Serve immediately while the crostini are still crisp.
Notes from Evelyn’s Kitchen
- Let the goat cheese soften at room temperature before whipping for the smoothest texture.
- Assemble the crostini shortly before serving so the toasted bread stays crisp.
- Toast the baguette slices ahead of time if you’re entertaining, then assemble just before serving.
- If your raspberries are especially large, cut them in half before topping the crostini.
