Easy Southwestern Chicken Tortilla Soup

This easy Southwestern Chicken Tortilla Soup is hearty, flavorful, and comes together right on the stovetop. Ingredients

  • 2 teaspoons oil
  • ½ medium onion, diced
  • 1 jalapeño, seeded and diced
  • 1 (28 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked shredded chicken
  • 1 packet Ordinary Evelyn’s Southwestern Dip Mix
  • ¼ teaspoon salt
  • 4 cups chicken broth

For serving, optional:

  • Diced avocado
  • Fresh cilantro
  • Crushed tortilla chips
  • Lime wedges
  • Shredded cheese
  • Sour cream

Instructions

1) Sauté the vegetables

Heat the oil in a large pot or Dutch oven over medium heat. Add the diced onion and jalapeño and sauté for about 4–5 minutes, until softened.

2) Build the soup

Add the diced tomatoes, black beans, corn, shredded chicken, Ordinary Evelyn’s Southwestern Dip Mix, salt, and chicken broth. Stir well to combine.

3) Simmer

Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for about 15–20 minutes, allowing all of those Southwestern flavors to come together.

4) Taste & season

Give the soup a taste and add additional salt if needed.

5) Add your toppings

Ladle the soup into bowls and finish with diced avocado, fresh cilantro, crushed tortilla chips, or any of your favorite tortilla soup toppings. Serve warm and enjoy!
